Rosetta's Cal-Mex Recipes
 
 


2 tblsp. butter
6 zucchini (sliced)
1/2 lb. fresh mushrooms (sliced)
1 fresh tomato (chopped)
1 onion (sliced)
1 cup Rosetta's Salsa
1/2 tsp. each, cumin & garlic salt
2 cups shredded monterey jack cheese
salt & pepper to taste

Melt butter in fry pan, add zucchini, mushroom, onions, & tomato. Stir frequently for 2 min.'s. Lower heat, add spices & salsa, sprinkle with shredded cheese. Cover & simmer for 10 min.'s.

note: for crunchier veggies, simmer for 5 min.'s.
